Simmered Pork Offal

This is a standard recipe in our home that I learned from my mother.
You can use any type of miso you would like, white miso, red miso, or a blend. It doesn't matter. Recipe by Yuuyuu0221

Steps
- 1
Boil the offal once, then dump out the water. Wash and cut the larger pieces into bite-sized pieces.
- 2
Put Step 1 and the ★ ingredients into a pot and turn on the heat. Once it comes to a boil, add the ☆ ingredients and simmer on low heat for 1 hour.
- 3
Cut the daikon into 8 mm pieces, the carrot into 5 mm pieces. Cut the konnyaku into thin, rectangles and lightly boil to remove the astringent taste.
- 4
Add Step 3 to the pot from Step 2 and simmer until the vegetables have become tender (about 20-30 minutes). Remove the Japanese leek and the ginger.
- 5
Lastly, flavor with the miso, soy sauce, and mirin.
- 6
Serve in a dish and garnish with shichimi spice and finely chopped green onion.
