Ingredients

  1. 4salmon filets
  2. 2 tbsphoisin sauce
  3. 1 tbspginger; minced
  4. 1 cupmandarin oranges
  5. 1 cuporange juice
  6. 2 tsponion powder
  7. 1 tspgarlic powder
  8. 1sesame oil; as needed
  9. 1salt and white pepper

    Marinate fish in orange juice and ginger for 1-4 hours.

    Spray a saute pan that is just large enough to fit the salmon with non-stick cooking spray. Add mandarins and their juice to the pan. Save a few slices for garnish. Toss fish with enough oil to cover and season with dried spices. Place atop mandarins. Bake at 350° for approximately 10-15 minutes or until thermometer reaches 145°. Baste with hoisin sauce during last five minutes of cooking.
