First, prepare the dough for the parathas. In a large bowl, combine the flour, salt, and ghee. Gradually add water and knead to make a soft dough. Cover and let it rest for 10 minutes.

Next, prepare the paneer filling for the parathas.

In a bowl, mash the paneer. Add the finely chopped onion, green chili, bell pepper, and cilantro. Grate in the ginger. Add salt, cumin seeds, red chili powder, and turmeric powder. Mix everything well. The paneer filling is ready.

Now, let's make the parathas.

Knead the dough briefly and divide it into portions. Take one portion and flatten it into a small bowl shape with your hands. Place some paneer filling in the center. Bring the edges together to seal the filling inside. Dust with a little dry flour and roll it out into a flat circle.

Heat a skillet or griddle over medium heat. Place the rolled paratha on the hot skillet and cook both sides with ghee until golden and crisp. Repeat with the remaining dough and filling.

Delicious and quick paneer parathas are ready. I served them with tangy-sweet tomato chutney and cilantro chutney. Serve with your favorite accompaniments and enjoy!
