A different, quick, and fairly healthy way to cook fish that kids will enjoy.

Rinse the sole fillets. If they are large, cut them in half (optional, but works better for kids).

Beat one egg with a few basil leaves (a blender works fine) and pour into a shallow bowl.

In another bowl, add the breadcrumbs, some chopped basil leaves, and salt to taste.

Preheat the air fryer for 5 minutes at 400°F (200°C).

Dip each fillet in the egg mixture, then coat with the breadcrumb mixture. Place the fillets in the preheated air fryer, making sure they don’t touch each other.

Use a pastry brush to lightly coat each fillet with olive oil. Air fry for 10-12 minutes at 355°F (180°C), flipping the fillets halfway through. Dinner is ready!
