Egg fried rice is one of those really easy and simple recipes that requires a couple of ingredients and just a few minutes . This recipe is similar to that of veg fried rice. Using star anise, mace and garlic add great flavours to the rice that we often find in restaurant style rice . You can even use just vinegar in place of soy sauce. You can even add chilli or tomato sauce as desired. One very important thing to keep in mind is that the rice should be 'al dente' . The rice should be firm and not mushy. This is the important criteria for any fried rice recipe.

Ingredients

40 minutes
4-5 servings
  1. 3 cupsraw Rice
  2. 1 cupCarrots finely chopped
  3. 1 cupSpring Onions chopped
  4. 1 cupCapsicum chopped
  5. 1 cupFrench Beans chopped
  6. 1 tspVinegar
  7. 2 tspSoy sauce
  8. 1 tspSalt
  9. 1 tspBlack Pepper Powder
  10. 4-5Garlic cloves chopped
  11. 3 tbspOil
  12. 1Star anise
  13. 2 strandsMace
  14. 1 tspChilli Garlic Sauce
  15. For the Egg Scramble-
  16. 5-6Eggs
  17. 1/2 tspSalt
  18. 1 tspBlack Pepper Powder
  19. 2 tbspOil

Steps

40 minutes
  1. 1

    Boil water with a pinch of salt. Add rice and cook them 'al dente'. This is a very important criteria. Too crucial actually.

    Drain and set aside. Cut all the veggies up and set them aside too until later use.

  3. 3

    Heat oil in a pan. Add the star anise, mace and chopped garlic. Let the garlic turn brown in colour on a high flame for 3-4 minutes. Next add the chopped veggies, whites of spring onions and mix well again. Reduce the flame to low.

    After a minute, add in soy sauce, pepper powder and vinegar and mix again. Let it simmer for a minute. And finally set them aside. It's crucial that the veggies maintain their crunch.

    FOR THE EGG SCRAMBLE :
    Heat oil in a pan. Crack the eggs in a bowl. Whisk them with pepper powder and salt. Add them to the pan and scramble till thoroughly cooked.

  6. 6

    FOR THE EGG FRIED RICE-
    Add in the Veggies and the Eggs to the cooked rice. Mix with light hands and fluff up the Rice carefully

    Garnish it with Spring Onions. Serve hot with any Manchurian dish. I served with Chicken Manchurian. You can even serve with any side dish of your choice.
