Soyachunk Moong Sprouts in Lettuce Cups

Soya chunks known as ‘vegetarian’s meat’ has a nutritional profile comparable to several non-vegetarian foods. Soya chunks are also very versatile and can also be cooked to have a similar flavour as non-veg curries. To make a nutritious yet tasty meal I thought of giving some additional benefits of sprouted moong and used lettuce leaves to make it more nutrients packed.
*Soy is full of polyunsaturated fats, proteins and omega 3 fatty acids. They are also rich in calcium and iron while providing no extra sugar or sodium to the body.
*Moong Sprouts are high in nutrients and antioxidants, which may provide health benefits.
In fact, they may protect against heat stroke, aid digestive health, promote weight loss and lower “bad” LDL cholesterol, blood pressure and blood sugar levels.
*The health benefits of lettuce come primarily from its vitamin content.

Steps

Wash and boil the soybean chunks till soft. Drain and keep aside. Once it cools make fine keema using a blender

Take 2 tbsp olive oil add 1/2 tsp cumin seeds,cut onions, green capsicum. Sauté lightly and add chopped tomatoes

Next add moong sprouts and mix nicely. Add cumin and coriander powder, salt and sugar to taste.

Add the soya keema and now mix very nicely. Finally add chopped coriander leaves and your stuff is ready.

Prepare three lettuce leaves by cleaning it well and place a handful of the soya sprout mixture and serve. You may drizzle some lemon juice if you want. Enjoy a nutritious bite.
