The classic version, just like we make at home regularly because it's just so good. We're using up the last zucchini, eggplant, and tomatoes from the garden.

Wash and cut all the vegetables into wedges.

Heat a large pot with the tablespoon of olive oil.

Sauté the onion until soft, but do not let it brown.

Add the vegetables.

Add the tomato purée.

Add the tablespoon of garlic oil and season with salt, pepper, and garlic powder.

Stir, cover, and let simmer on very low heat for at least 45 minutes. The longer it simmers, the better it tastes. Enjoy!
