1. Pull out any pin bones and skin from the salmon and thoroughly mix it up in a bowl until it is nicely shredded.

2. Finely chop the onion and bell pepper and add to the bowl with the salmon.

3. Beat 2 eggs in a separate bowl and pour the evenly mixed eggs into the bowl with the salmon and vegetables.

4. Add about ¾ of the measured bread crumbs and the garlic, salt, and pepper and incorporate all the ingredients until they are evenly mixed.

5. Form small, hamburger-sized patties. If they seem too wet to stay together, add the rest of the seasoned bread crumbs. If they are still too wet, add more bread crumbs as needed to form the patties.

6. Heat a large skillet on medium-high heat with enough oil to entirely coat the bottom.

7. Pan fry the patties until they have a slightly brown, crispy coating and then flip them until the other side is also golden brown.

8. Serve with thousand island dressing or mix an equal measure of ketchup and mayonnaise and add a dash of smoked paprika to top the patties.
