Actually, I'm not really that fond of tuna, but I can eat it when prepared this way. When I had a part-time job, a local shop had a yukhoe-style tuna carpaccio dish, so I wanted to try to make my own version of it.

Tianmianjiang has a subtle flavor, but if you don't have any, you can also use red miso. If you like spicy food, you can also use gochujang or doubanjiang. Recipe by kobari

Ingredients

2 servings
  • 100 gramsFresh sashimi grade tuna
  • 1 tbsp◎Sesame oil
  • 2 tbsp◎Soy sauce
  • 2 tbsp◎Mirin
  • 1/2 clove◎Grated garlic
  • 1/2thumbtip sized piece ◎Grated ginger
  • 2 tsp◎Ground sesame seeds
  • 1◎Ichimi
  • 1 dash◎Tianmianjiang
  • 1Egg yolk
  • 1Onions, green onions
  • 1White sesame seeds

Steps

  1. 1

    Mix together the ◎ seasoning ingredients.

  2. 2

    Cut the tuna into thin, bite-sized pieces, then mix together with the seasoning from Step 1.

  3. 3

    Top with green onions and egg yolk. Garnish with sesame seeds.
