I had some leftover chicken from a previous recipe and decided to reuse it with rice and yellow bell pepper.

Bring a pot of water to a boil. Add about 1/2 tablespoon of salt. Once boiling, add the rice and cook for 15 minutes.

Meanwhile, heat the extra virgin olive oil in a skillet. Add the finely chopped onion, then add the chicken, the yellow bell pepper (washed, seeded, and chopped), and the potato.

Add the paprika, salt, pepper, and about 1/4 cup of water to prevent sticking. When everything is cooked, turn off the heat. Shape the rice as you like.
