Honey Sriracha Baked Chicken

Inspired by @Grendellily on Twitter. This was originally a slow-cooker dish. Her photo looked really good, but when asked for a recipe, she explained it was all to taste. Here's what I did.
When sampling the sauce, it seemed a bit spicy, but once baked on the chicken it is a tasty sweet heat that doesn't overpower.

Edit: On my second try, I decided to increase the honey to two tbsp and add 1/4 cup of apple juice which reduces the spiciness and allows cooking 8 thighs instead of 4.

I also decided to forego the broiler and put all eight thighs in a large covered pan simmering for 10 minutes, then flipping for another 10 to speed the process up.

Check for doneness then throw then under the broiler for a final 5 minutes to crisp things up.

Ingredients

60 minutes
8 thighs
  1. 1/4 cupHuy Fong Sriracha Hot Chili Sauce
  2. 1/4 cupapple juice
  3. 2 tbspdark brown sugar
  4. 2 tbsphoney
  5. 1 tspgarlic powder

Cooking Instructions

    Mix the ingredients in a small bowl and let set.

    Take 4 bone-in chicken thighs and bake in a conventional oven at 350° for 30 mins. Alternatively, I have a convection toaster oven and completed this step in 20 minutes.

    Dunk the thighs in the sauce and coat all sides. Return the chicken to the broiler for another 10 minutes.

    Plate and garnish with chives or parsley.
    I added sides of Baked Beans and Garlic Parmesean bread sticks. It would also work well with rice and steamed broccoli.
