I've wanted to make butter cookies for a while. When I was little, we always had them at home. The ones in the blue tin, I don't know if any of you had them too, but they are delicious. Since we have lactose intolerance at home, I decided to make them again 😃 to enjoy them once more.

Lactose-Free Danish Butter Cookies

Ingredients

40 min + resting
90 cookies
  1. For the cookie dough:
  2. 4 cupsall-purpose flour (about 500 grams)
  3. 1 cuplactose-free butter (about 235 grams)
  4. 1 tablespoonsunflower oil (about 15 ml)
  5. Zest of half a lemon
  6. 1/2 teaspoonsalt
  7. 3/4 cupsugar (about 150 grams)
  8. 1/2 teaspoonvanilla extract
  9. 2eggs
  10. 1 teaspoonbaking powder (6 grams, a mix of cream of tartar and baking soda)
  11. For decoration:
  12. Powdered sugar
  13. Melted dark chocolate
  14. Chopped cashews
  15. Shredded coconut

Cooking Instructions

    Prepare and measure all the ingredients. Let the butter come to room temperature (almost like a soft paste).

    In a large bowl, sift the flour using a sieve. Make a well in the center and gradually add the rest of the ingredients while kneading with your hands until you form a large, round ball. Before working with the dough, refrigerate it for 20 minutes.

    Divide the dough into 3 equal parts and start kneading and rolling out the first ball until it's very thin. Choose your favorite cookie cutter and start making your cookies. Place them on a baking sheet lined with parchment paper and lightly greased with oil. With these quantities, I got 3 trays of cookies. Repeat the process until all the dough is used up.

    Bake at 350°F (180°C) for 10 to 15 minutes. They are ready when you see the edges start to turn golden. Cool them off the baking sheet and repeat the baking process until all your cookies are done 🤩🤩🤩

    For decoration, you can dust them with powdered sugar, dip them in chocolate, add toppings like nuts or coconut, or make them double and fill them with jam.

    This is how they looked once decorated. I left some plain (which were the favorites at home), and the kids preferred the chocolate ones 🍫, so try different options that will surely turn out great 👍

    The best way to store them is in a metal or glass container, and if you have cookie doilies, place each one on a doily for a fantastic result 💃💃
