Gluten Free Nut Butter Cookies

My daughter and I make these when we don't wish to take too much time making something. What's great about these cookies is you can add pretty much any optional ingredients you'd like.

My daughter and I make these when we don't wish to take too much time making something. What's great about these cookies is you can add pretty much any optional ingredients you'd like.
Cooking Instructions

Preheat oven to 350

Combine in a mixing bowl Almond butter, Vanilla, cinnamon, chocolate chips. Add sugar slowly to test for taste, before adding egg. Taste batter to see if more or less sugar could be added. If batter is of desired sweetness, quickly whip egg, and fold into mixture.

Roll cookies into a ball and set on cookie sheet

Cook for 11-15 mins depending how large or how crunchy you desire your cookies

I went back to basics with this. However, far few ingredients and they actually remind me of peanut butter cookies now. Informational notice here.. Usually these type of cookies are around 100 calories a cookie, these currently stand at less than 20 cal a cookie, depending on sweetener used.I'm considering these fully hacked now. Update: Maybe cause I don't have a sweet tooth but I acted out one tbsp of truvia. They were borderline sugar cookies. I have second recipe for a chewing variation in the works, little higher on calories but a bit heartier as well. The second revision deals with using coconut flour and pumpkin purée to provide more chew. I'll mark it up as v2 when I'm doneFood Hacker
