Let me say this is Kerala style beetroot raita…1 single beetroot was left at the bottom of the veg tray of my fridge.while making this dish ,if you need the deep colour of beetroot,do use a fresh one..my dish lacks colour..since beetroot has been in fridge for sometime now.I had some frozen grated coconut forgotten in my freezer …
The recipe is bit tweaked by me,from a traditional recipe with fresh beetroot .

Ingredients

1/2 hr
3 - 4 servings
  • 1beetroot,peeled,grated,
  • 2 cupCurd,whisked well and lumps removed
  • 1/4 cupcoconut grated
  • 3green chillies
  • 1 tbspnmustard seeds
  • 2 springscurry leaves
  • 2dry red chilli
  • 1 tbspSugar
  • Salt as required
  • 2 tbspnOil

    Grind coconut,half of the mustard,green chilli and few curry leaves into fine paste.use curd to grind the same instead of water

    Transfer the coconut paste to a bowl.add the whisked curd and mix well.I used a blender and added the curd.keep this aside.

    In a pan heat 2 tablespoon of oil,and add remaining mustard seeds and allow to splutter.add red chillies split to pieces and add curry leaves.now add the grated beetroot and salt as required and sauté well till it’s well done.cook in Low to medium heat.I sautéed till it’s dry and bit crispy.

    Transfer the cooked beetroot to a bowl.now add in the coconut,curd mixture and a table spoon of sugar.mix well

    Transfer to serving bowl and add few fresh curry leaves..this was my dish for rice today apart from stir fries and teriyaki chicken.
