Ingredients

Serves 3 servings
  1. 4beets
  2. 1 tablespoonolive oil (optional)
  3. Juice of 1 lemon
  4. Salt to taste

Steps

40 minutes
  1. 1

    Wash the beets thoroughly. Place them in a preheated oven at 350°F (176°C).

  2. 2

    Roast for about 50 minutes, or until a toothpick inserts easily.

  3. 3

    Let cool, then peel and cut into cubes.

  4. 4

    Toss with olive oil, lemon juice, and salt. Refrigerate.
