Ingredients

  1. 1 tbspvegetable oil
  2. 0.5onion, finely chopped
  3. 1whole thumb-sized piece ginger, finely chopped
  4. 1red chilli, finely chopped
  5. 2skinless chicken breasts, cut into bite-sized pieces
  6. 200 gbasmati rice
  7. 600 mLvegetable stock
  8. 100 gfrozen edamame / soya beans
  9. 1 bunchchopped coriander leaves
  10. Fat-free Greek yoghurt (optional), to serve

Cooking Instructions

    Heat the pan under medium heat, add add the oil, onion, ginger and chilli and season for 5 minutes.

    Add the chicken and uncooked rice, cook for 2 minutes and then add the stock and bring to boil.

  3. 3

    Lower the heat, cover and cook for 8 - 10 minutes until the rice is just cooked. Mix constantly.

    During the final 3 minutes of cooking, add the edamame beans.

  5. 5

    Pour into bowl, and sprinkle coriander leaves on top.

    Optional: Serve with a Dollop of Greek Yogurt.
