Cooking Instructions

fry garlic and.onion in oil for 6-8 minutes until soft

add all spices ,cook, stirring for 3 minutes,

add beans ,rice.and stock, cover,cook over low heat to simmer for 12-15 minutes until rice is,tender,

stir in the butter.

meanwhile brush the sliced zucchini from both sides with oil and season,with salt and pepper,add to a hot griddle pan and cook for 3 minutes from each side until slightly charred

serve the rice with the zucchini and garnish with creme fraiche

for polpettes

add a little flour to leftover mixture and blend down for about 30 seconds or so, not to smooth. Form polpettes ( little bitesize portions), first roll in flour then whisked egg , then homemade breadcrumbs that are seasoned with a pinch of salt ,pepper, a little touch of chilli and/or garlic powder, Then fry in oil until heated through and golden brown.Or make burger sized for bigger appetite.

Our nearby mountain lake grows some of the very best wild rice, nutty and creamy in flavor. And fresh oyster mushrooms grow on the kitchen counter every 30 days, they are ready to harvest today. We also saved shiitake mushrooms from last fall by air drying in the air fryer.Shiitake mushrooms taste like beef. Oyster mushrooms taste like lobster. Porcini mushrooms taste like smoked ham.A pilaf is rice cooked in broth, in this case porcini mushroom broth. The mushrooms are sauteed in white cooking wine. Shallots are glazed till sweet and optional small wagyu meat balls are browned served as a side dish. Hi everyone!! I’m not sure but I think because March has kicked in I am definitely starting to feel that Spring fever….I can’t seem to sit in one place and especially in front of my computer to write my post. It took me a few hours but I finally just sat down!! 🙂 but I keep staring out the window at the trees, the flowers, which I’ve noticed have started to bloom, (make note to myself time to start planting my herbs) people walking with their dogs, jogging, some ladies chatting away, actually quite unusual?? Did everyone take the day off? hmmmOk, I need to gather my thoughts and write this recipe, a Mussel and Rice dish that is so delicious that I am sure you will enjoy..of course that is if you enjoy eating Mussels..:) This recipe is usually made in the summer, but I can’t seem to wait a couple of month so I went ahead and made it today. I went to our local fish market this morning and was so happily surprised because they have a huge variety of fishes to select from. Here is cookpad member’s Sarvat traditional pulao recipe. I had already used up the shanks from my butchered lamb , so I tried her traditional Afghan dish with other meat, smoked ham shanks. My apologies to Afghan tradition. I used salt free beef broth to compensate for the smoked shank salt and taste. The result is delicious, a meaty, rich dish, spicy and sweet and fresh at the same time, with flavorful rice and spicy meat. Hobby Horseman
