When you manage to buy a whole, it's really good to cut thick and enjoy the really tender texture, something special.

  2. 1lemon
  3. Salt & pepper
  4. Ginger
  5. Precook
  6. Green onion
  7. Carrot
  8. Any flavourful vegetables

    To make a whole tongue to be cooked easily, there're multiple process to take.

    The easiest way, maybe not tastful way, is to boil in pressure cook with vegetables, such as green part of onion, carrot, celery. Fully salted the tongue and put water just over the meat and cook for 20 min. Easily peel the skin afterward.

    Slice the tongue to your favourite size. The root side part is softer, so you can slice thicker.

    You could eat already, but I wanted to make a bit like yakiniku style, so grill on the surface mildly.

    If you didn't boil, it's texture and taste are better, but the part of taking out of skin is a bit of work to do.

    Two different sauces to enjoy.
    One salt, pepper and lemon. Another one is with soysauce and ginger.

Try not to use pressure cooker since it make the texture soften. Maybe in my experienced was with beef and other part of beef, I think it treat the same as ox tongue. I knew it since my mom cooked beef and other part of beef in a pressure cooker and once I cook it in a pan, I get the texture I want.
