These are Sun dried small Fenugreek Leaves done at home sweet home.
It's practically very easy. Don't forget to wash the leaves. Allow to drain well. Now just spread on the plate or a tray and leave it under the Sun for two days. They are fully dried in two to three days. That's it. As simple as that.
This dried Homemade Fenugreek Leaves or Kasuri Methi is absolutely perfect for using in many a Curries and Gravies. It becomes a way lot easier this way. In places where fresh Fenugreek is not available throughout the year, this becomes very handy.

Chop or cut the fenugreek leaves including a little part of the white stems and leave the rest. Discard it anyways. It has no use whatsoever. But if desired, even that can be dried and used in curries or gravies. Now spread this in a large tray or plate. Dry under the Sun for about 2 to 3 days.

Store this in an airtight container in the refrigerator for months together. There is no need to worry about the availability of the fenugreek leaves. This is an easy and a fool proof method to store them for a long long time. Whenever you need to use it, just rinse it under water in a tea strainer. It will be as fresh as you want it to be. Enjoy!
