In North India, when the winters get really cold, my mom used to make a pilaf with whole spices. Inspired by that, I made jeera rice using whole spices.

In North India, when the winters get really cold, my mom used to make a pilaf with whole spices. Inspired by that, I made jeera rice using whole spices.

Pick through the rice and rinse it 2-3 times with water. Set aside all the whole spices.

Heat oil in a pan. Add all the whole spices and cumin seeds, and sauté. Add the rice and mix well.

Add water and salt. Once it comes to a boil, reduce the heat to low.

Cook the rice until about 90% done, then turn off the heat and let it sit covered for 5 minutes. Garnish with cilantro and serve with raita or chickpeas.
