Ingredients

  1. 2large eggs beaten
  2. 2/3 cup2% milk
  3. 1 1/2 cupsshredded cheddar cheese
  4. 1 cupcrushed saltines (28 crackers)
  5. 1 cupcarrots shredded
  6. 1/2 cupfinely chopped onion
  7. 1/2 tspsalt
  8. 1/4 tspgarlic powder
  9. 1/4 tsppepper
  10. 2 lbslean ground beef
  11. 1/2 cuppacked brown sugar
  12. 1/2 cupketchup
  13. 2 TbspDijon mustard
  14. Minced fresh parsley(optional)

Cooking Instructions

    In a large bowl, combine the eggs, milk, cheese, saltines, carrots, onions, salt, garlic powder and pepper. Crumble beef over the mixture and mix well. Shape into a loaf. Place loaf in a greased 13x9 baking dish. Bake uncovered at 350 degrees for 50 minutes

    For glaze, in a small sauce pan, bring brown sugar, ketchup and mustard to a boil. Reduce heat; simmer, uncovered for 3-5 minutes or until heated through. Spoon over meat loaf.

    Bake 10-15 minutes longer or until or until the meat is no longer pink and thermometer is reads 160 degrees. Drain; let stand for 10 minutes before slicing. Top with parsley
