Middle-eastern curry and sausage

Ingredients

1-2 /5-6 hours
2-4 servings
  1. 1 cancream of potato
  2. 2 cupsbeef broth
  3. 1 tbspolive oil
  4. 2 canpreferred white bean (great Northern or chick)
  5. 2 tablespoonsThai red curry paste
  6. 2 tablespoonstomato paste
  7. 1/2 tbspginger
  8. 1/2 tbspCoriander
  9. 1/2 tbspturmeric
  10. 1/2 tbspcumin
  11. 1/2 tbspcayenne powder
  12. 1/2 cupchopped onions (more if desired)
  13. 1/4 cupminced garlic
  14. 1-2 cupssliced carrots
  15. 1/2 cupsliced green/ red peppers
  16. cous cous to serve with
  17. packagesausage link of your choice to slice and put in

Cooking Instructions

1-2 /5-6 hours
  1. 1

    Mix all ingredients except for the cous cous in slow cooker or instant pot

  2. 2

    Cook on high for 2-3 hours
    or low for 5-6

  3. 3

    Stir intermittently.

  4. 4

    Serve over cous cous or aromatic rice.
    garnish with Thai basil or similar herb
