Pav Bhaji Bruschetta - A feast for an eye

In a heavy bottom pan add butter & oil add chopped onions and saute till pink, add the tomatoes and keep cooking till the tomatoes turn soft. Add in the ginger garlic paste & cook for few minutes.Add in the roughly mashed boiled vegetables in the tomato onion mixture, add in rest of the ingredients of bhaji and keep cooking till all the vegetables are properly incorporated with the masalas.

Preheat the oven at 180 degreeC for 10 minutes.Cut each pav in half, apply butter and toast them by sprinkling some garlic powder on them till the sides are little crisp.Remove them from the oven, apply dollop of Bhaji on each grilled pav, garnish with grated cheese, spread some fresh Salsa on top,garnish with finely chopped fresh coriander and grill the pav till crisp and the cheese melts. Decorate each pav with lemon wedges, fresh Salsa and serve hot.
