It’s my go to when we have Thai and I’ve tried many times to replicate my dish of choice and this is the closest to finding the taste I’ve been looking for. I’ve taken inspiration for this one from The Heathy Maven (thank you!) but made a few tweaks based on what I had available in my kitchen and supermarket and my own tastes (I love chilli) - this also makes for the perfect #fakeaway.

Ingredients

30 mins
3 people
  • Crispy Tofu
  • 450 gtofu
  • 4 tbspcorn flour
  • Seasoning
  • 2 tbspsesame oil
  • The sauce
  • 2 tbspsiracha
  • 1/3 cupsoy sauce
  • 1 tbspfish sauce
  • 2 tbspmirin
  • 2 tbspbrown sugar
  • The veg
  • 2-4garlic cloves crushed depending on size (mine were big so I used two)
  • 1white onion finely sliced
  • 1chilli finely sliced (optional if you love heat)
  • 1 inchginger finely grated
  • 1red pepper finely sliced
  • 200 gtenderstem broccoli (you might need to slice on two depending on how thick the stems are)
  • 1 handfulfreshly torn basil

    First, make your sauce by combing all of the ingredients and set aside for later

  2. 2

    Next prepare your tofu - squeeze out as much liquid as possible, chop into bite size cubes and coat in seasoned cornflour.

    Then heat 2 tbsp sesame oil over a medium/high heat and fry the tofu for approx 6-8 minutes, turning occasionally until golden brown. Then set aside.

    Get your tofu nice and crispy

    Then add another tbsp oil to the pan over a medium heat and add all of the veg. Cook for a minute before adding 2 tbsp water, cover with a lid and steam for 2 minutes. Remove the lid and cook on a high heat for another minute or two until the veg starts to soften.

  5. 5

    Finally add the tofu back into the pan with the sauce. Bring to the boil and then simmer until the sauce thickens. Add the basil and serve with rice.

Tips

Get your tofu nice and crispy

To get your tofu nice and crispy, squeeze out the moisture, coat it in seasoned corn flour
