Ingredients

  1. 1whole chicken chopped
  2. 1 cupwater
  3. 1 tablespoonsugar
  4. 1canned coconut milk
  5. 1 teaspoonsalt and pepper
  6. 2 teaspooncurry powder
  7. 2 teaspoonThai curry paste
  8. 1onion chopped
  9. 3 clovesgarlic
  10. 4potato sliced in medium
  11. 3carrots sliced diagonally

Steps

  1. 1

    Sautè garlic and onion for 3-5 mins until soft.

  2. 2

    Marinate chicken with salt and pepper to taste.

  3. 3

    Add marinated chicken and cook for 15-20 mins until it changed in color.

  4. 4

    Add curry powder followed by coconut milk and mix. Let it stand for 5 mins then add thai curry paste (optional) for spicy taste. Let it stand for 20-30 mins until it absorbs.

    Add sugar to taste and a cup of water if necessary.

  6. 6

    Add fried potato and carrots. Let it boil for 5-7 mins. Ready to serve! Enjoy!
