I wanted lot of veg to eat and had some leftover sauce in my fridge ,I used for another dish more than 3 weeks ago. It is a lovely side dish or a vegetarian meal on its on if you put in some potato and feta cheese. You can use almost all root veg in the quantities you like.

I wanted lot of veg to eat and had some leftover sauce in my fridge ,I used for another dish more than 3 weeks ago. It is a lovely side dish or a vegetarian meal on its on if you put in some potato and feta cheese. You can use almost all root veg in the quantities you like.

Make the sauce by putting all ingredients in a jampot put on the lit and shake well.

You need only half of this sauce. But the rest keeps for at least 3 weeks in your fridge.

Clean the veg

Cut the veg into medium pieces. Try cutting them into different shapes

Put them in a heath proof container. And put on 1/2 sauce or less if you prefer it not to sweat

Add a little water and some salt flakes

Bake in a 200°C fan oven for 30 min. Or until the veg are ready they must have some bite left. Hussel the veg half way and add some more water.

Put on some parsley to garnish.

Served with rucola,feta and garlic croutons.
