First, bring a large pot of water to a boil for the pasta. Meanwhile, slice the artichokes thinly and place them in a bowl.

Pour some extra-virgin olive oil into a nonstick skillet and cook the bacon until it starts to brown.

Once the bacon is browned, add the artichokes to the skillet and stir. Pour in the white wine and let it evaporate, then season with salt.

Add a ladle of pasta cooking water and cook for about 10 minutes, stirring occasionally. Meanwhile, add salt to the boiling water and cook the pasta.

In a bowl, crack the eggs, add the grated Parmesan, a little salt and pepper, and beat well with a fork. Drain the pasta al dente and add it directly to the skillet, mixing well with the sauce.

With the heat off, add the egg mixture and stir. Serve your artichoke carbonara hot!
