Simple Gluten-Free Vanilla Macaroon

I learned this recipe in the U.S. The macaroons will be perfectly white and delicious if you use almond powder as listed in the recipe. This is one of my favorite recipes because these macaroons are healthy, easy, and super delicious. The word "macaroon" supposedly means "cookies with coconut mixed into the dough."

The U.S. version of the recipe lists almond flour as an ingredient. This is equivalent to almond powder or ground almond in Japan. The macaroons in the photo look a little bit brownish because I used almond meal instead. It's a coarsely ground powder with skin attached to it. Recipe by chargers

Ingredients

  • 800 mlFinely shredded coconut
  • 400 mlAlmond powder / almond flour
  • 150 mlHoney or maple syrup or agave syrup
  • 66 mlCoconut oil
  • 1 tbspVanilla
  • 1/4 tspSea salt

Steps

  1. 1

    Combine all ingredients in a bowl. (In the States, it's also common to mix these in a food processor for 2 to 3 minutes. I mix mine manually.)

  2. 2

    Drop about 1 tablespoon of the dough balls on parchment paper. (Because the dough tends to be hard-textured, I round off the shapes with my hands.)

  3. 3

    Freeze. Remove from the freezer right before serving.
