10-12 muffins

1egg
1/3cup veg oil
1/3cup sugar
1tsp maple extract
1 1/4cup milk or water
1 1/2cups oat flour or blended oats
3/4cup gluten-free flour
1tsp salt
2tsp baking powder
3/4cup frozen or dried blueberries

Combine ingredients in a mixing bowl and whisk together. If batter is runny or thick, adjust until there is a pancake batter consistency.

Pour batter into a greased or lined muffin tin and bake at 375F / 200C for 17-20 minutes

Allow to cool for 5-10 minutes and enjoy!
