Green Pepper, Tomatoes and Ugwu vegetable Sauce

This sauce was born out of necessity.
I stumbled on really soft brisket bone in the market, the type that literally melts in the mouth and I knew I just had to buy it.
I wanted to make a green pepper and tomatoes sauce with a twist , so I got ugwu leaves , pomo and made my own smoked mackerel fish and the rest is history.
If only you had tasted this my green pepper sauce, you understand better what I'm trying to say. 😉🙃👍
Anyways, let me quickly share the recipe with you all, cos I've made this sauce again and everytime it gets more delicious than the previous.
Thank you all and happy cooking and eating 🙏👍

In a non-stick pan, add the bleach pslm oil, once its hot, add in the iru, locust beans, pour in the onions tomatoes and pepper and mix well.
Allow it to fry and cook, stir to avoid it burning or becoming too dry..
Pour in the brisket bone with the pomo and meat stock, give it a good stir, you can add all the seasoning cubes and extra black pepper And smoked mackerel fish. allow it to simmer...
Lastly, add the sliced Ugwu leaves and just allow to simmer for 3-5mins...and remove from heat.
