Wash the mutton pieces well. In a mixer grinder add garlic cloves, ginger cut into small pieces, onion cut into cubes and 3-4 green chilies, make a paste. Set aside

In a bowl add yogurt and add half of ginger-garlic-green chillies-onion paste, 1 tsp cumin powder, 1 tsp coriander powder and 1 tsp red chilli powder. Mix well and add the mutton to it. Mix with the mutton well and drizzle 1 Tbsp oil. Set aside to marinate for 2 hours

In a earthen Handi add mustard oil and bring it to heat. Add whole garam masala, bay leaf, whole red chilli and sliced onions.

On low flame stir for 2-3 mins until onions are softened. Add chopped tomatoes and stir. Add 1/4 cup water and cover to cook for 2 mins or until tomatoes are softened

Add marinated mutton, turmeric powder, Kashmiri red chilli powder, rest of the cumin powder, garam masala powder, salt. Mix well

Cover to cook for 5-7 mins and oil will surface at this time. Add peeled and halved potatoes

Add hot water and cover to cook on Dum with Ata made into a dough and put all across the edges of the Handi. Cover and cook on low flame for 40 mins

The Ata dough would be hard and with a knife cut through all around the Handi edges, set aside the cover and check on doneness of the mutton and potatoes.

Once done add ghee and set aside but keep covered for another 10 mins

Serve with your favourite Roti, Paratha, Pulao, Steamed rice
