Idli is steamed spongy cakes. It derives from rice and lentils. Here I used rice,urad dal and moong dal. I prefer fermentation for softness of idli . You can also try no- rice idli. Idli is protein packed, oil free recipe. There are many variant exist for making idli. It's perfect option for breakfast.

Soaking lentils : Firstly wash and soak rice, moong dal, few fenugreek seeds and urad dal for 6 hours. After 6 hours drain water from it.
Grinding lentils : Take a mixer jar add all the ingredients If you need then add little water and make a smooth but thick batter. Keep aside for 7-8 hours for fermentation process. - 2
For tempering process : heat oil in saucepan, add mustard seeds and allow to splutter. Then, mix chopped ginger, green chilli, curry leaves, cashews and roast till cashews turns light golden color.

Further, add grated carrot and chopped coriander leaves and give a good stir to all the ingredients. And add this tempering to batter. Add salt and gently mix it.

Now, take a steamer add water on bottom and heat it. grease idli plates with oil. Add a ladle of batter to each idli mould. Steam it for 20 minutes on medium flame.

Allow steam to fully release. And cool off for some minutes and then using spoon take out idli from mould.

Finally, serve it with sambhar, coconut chutney or green chutney.
