Cooking Instructions
- 1
Use an iron skillet for this recipe. Make sure it is a pre-seasoned pan.
- 2
Pour enough cooking oil to cover bottom of iron skillet and sprinkle with 1/4 to 1/2 teaspoon of cornmeal. Needs to be a small skillet. Larger ones need ingredients increased.
- 3
In a bowl, mix the cornmeal and buttermilk to a very thick texture.
- 4
Add the melted butter and mix in thoroughly
- 5
Add the hot water and mix to a consistency like cake batter. Add extra hot water if needed (or less).
- 6
Pour into skillet and bake in a preheated oven at 400° for about 30 to 40 minutes until golden brown.

Very flexible recipe. We usually add diced peppers for a little heat. NOTE: You can make your own buttermilk by adding a couple tablespoons of white vinegar to the milk and letting it curdle for ~10 min. Or you can just use milk. Lisa -
