Firstly, for the marination of chicken, to a large mixing bowl add washed and drained chicken cubes of desired size. To it add all the ingredients mentioned under “For Marination” except the oil which is for deep frying the chicken. Mix well to coat and set aside to marinate for about 30 minutes.

Heat oil in a deep frying pan. Cautiously add the marinated chicken cubes in the hot oil and deep fry on low medium flame until golden brown and crispy. Do not over crowd the pan. Fry few at a time.

Remove on kitchen towel to drain away the excess oil.

Heat 3 tablespoons of oil in a large pan on high flame. Add the slited green chillies and fry for few seconds. Add the finely chopped ginger and garlic.

Sauté for few seconds. Next add the chopped white part of spring onions and sauté until they turn slightly tender.

Now add the cubed onions and red, yellow and green bell peppers and sauté on high flame for two minutes. It should be tender but crunchy.

Now reduce the flame to low and add kashmiri red chilli powder, black pepper powder, sugar and salt and sauté for few seconds.

In a small bowl, prepare the sauce for seasoning ie. soy sauce, tomato ketchup, red chilli sauce and vinegar. Add it to the pan and sauté for about 2 to 3 minutes on low flame.

Add the corn flour slurry and mix it. Add the fried chicken pieces and toss until well combined. Add the roasted sesame seeds. Cook on low flame for few minutes until the sauce is absorbed by the chicken pieces.

Garnish with some more sesame seeds, chopped greens of spring onions and coriander leaves. Mix well and off the flame.

Super Delicious Chilli Chicken is ready. Serve it hot as an appetizer or with fried rice or noodles.
