Ingredients

Serves 8 servings
  • Kunafa Layer Ingredients:
  • 10.5 ozkunafa dough (shredded phyllo, kataifi) (about 300 grams)
  • 1/2 cupmelted butter (about 115 grams)
  • 1 tablespoonpowdered sugar
  • Mocha Layer Ingredients:
  • 1 tablespooninstant coffee (such as Nescafé)
  • 2 tablespoonscornstarch (powdered)
  • 2 cupswhole milk (about 480 ml)
  • 1 tablespoonsugar
  • 1 tablespoonunsweetened cocoa powder
  • 1/2 cupsimple syrup (about 120 ml), for soaking

  1. 1

    To prepare the kunafa layers:
    Crumble the kunafa dough. For best results, use dough that is not fresh (previously stored in the fridge).

    Sprinkle the powdered sugar over the kunafa and mix well.
    Pour in the melted butter and mix thoroughly so the kunafa absorbs all the butter.

    Divide the dough into two portions.
    Spread the first portion evenly in the bottom of a 8-inch (20 cm) springform pan.

    Bake in a preheated oven at medium heat until golden and crisp on both sides.
    As soon as it comes out of the oven, pour half of the cold simple syrup evenly over the layer so it stays crispy. Do not use hot syrup.

    Repeat the same process for the second kunafa layer.

  6. 6

    To prepare the mocha layer:
    Combine all the mocha ingredients in a saucepan and whisk together while cold.
    Place over heat, stirring constantly, until the mixture thickens into a pudding-like consistency.
    Let it cool slightly.

    Spread the mocha layer over the first kunafa layer.
    Once the second kunafa layer has cooled completely, crumble it and sprinkle over the mocha layer (this step is optional for serving).

    Serve cold or warm, as you prefer.
