Ingredients

4 servings
  • 1/2 cuptoor dal / pigeon pea lentils
  • 1small onion chopped
  • 1small tomato chopped
  • 1/4 cupbottle gourd / lauki chopped
  • 1/4 cupeggplant chopped
  • 6 pcsdrumstick
  • 2 tbspoil
  • 1/4 tspmustard seeds
  • 1/4 tspfenugreek seeds
  • 1/4 tsphing
  • 8-10curry leaves
  • 1dry red chilli
  • 1green chilli slits
  • 1 inchginger
  • 1 tbspkashmiri red chilli powder
  • 1 tspred chilli powder
  • 1/2 tspturmeric
  • 1.5 tbspsambhar masala
  • 1.5 tbsptamarind pulp
  • Salt to taste

    Wash dal 2 - 3 times then add it in the pressure cooker along with two cups of water and cook it on medium heat for 4 - 5 whistles. Let it cool down itself. Add some water to the dal and blend it with a hand blender or a whisk.

    Heat oil in a pot and add mustard seeds. When it crackles, add fenugreek seeds and hing. Add curry leaves along with dry red chilli, crushed ginger and green chilli slits.

    Now add chopped onion to it and saute until translucent. Now add all other vegetables and give it a good mix. Add turmeric, kashmiri chilli powder, red chilli powder, sambar masala, salt and tamarind pulp to it and mix it.

    Now add toor dal to it and add enough water to adjust the consistency according to your choice. Now Let it cook on medium heat until all the vegetables are done. Keep stirring in between. Cook it atleast 30 minutes as it tastes better with longer cooking time.

    Serve sambhar along with dosa, idli, uttapam, medu vada or steamed rice.
