Dealer's choice!I swear, my students literally ran happily amuck knowing they were not only making, but delivering and serving their very own piping hot finished soups to two of our largest Albuquerque homeless shelters early this morning! As usual, they were all so stinkin' enthusiastic and excited! Kids huh?! 😉 God love em'!Anywho, my students would eventually decide upon various traditional homemade soups. Mostly stews and chicken noodle. Or, dumpling dishes. Always a great idea. But, one of my 7 year old students decided to get their Asian on and go altogether Ninja rogue on their asses last night! [it's kinda funny seeing as how he's so very, VERY Jewish?] 🤔Anyway, not many Americans are aware of the true origins of traditional Chinese Hot & Sour Soup. This specific soup was initially created out of absolute necessity. Early on, it consisted ONLY of older Chinese kitchen table scraps. And, not the good kind either folks! [you know, like the iced cold moo goo we feed off of at 2:00 am flat assed drunk but always seem to somehow really appreciate?] Yup, you remember. I know you do. ;0)Hence the prompt additions of rice wine vinegar, soy and sugars to mask any [how shall we say] more curious flavors? Even the Chow Mein Noodles were old, dusty and leftover. Yup, it was all a grand, delicious cover up! That's right, everybody in the pool! Old or new - didn't matter!

Onion French Soup: a exquisite, traditional and basic recipe in any self-respecting kitchen. A delicious and simple dish that can be a first course at Christmas or a unique dish with a large bowl of soup at a homemade dinner.

(actually the thick gooey center of a Pot Pie)Seen a recipe on line, that I doctored up and this is what I came up with. Biscuit recipe was on Pinterest for copycat Red Lobster Cheddar Bay Biscuits (but you can actually use the box mix if you want to).I have also served this in a square wide mouth pint mason jar with a cap of Fillo dough over the mouth of the jar. Great presentation. Have done this for a dinner party and it was a huge hit.

This was just a crazy idea I had. It does have a punch in spice, heated but not too hot. This can be made a week ahead and just do the last step as needed.

I am not sure where this recipe came from (it is typewritten on a recipe card that belonged to my mother), but it is one of my youngest daughter's favourites. It has been modified slightly from the original recipe.

This dish originally comes from Solo, a big town in Central Java, Indonesia. We call it Sunflower soup because its shape is similar as sunflower. The unique thing about this dish is only available/served in some wedding parties in Solo. So far I have never found any restaurants in Indonesia that have this dish on their menu. This is my first attempt to make it and it is very technical, but to see how the way it turns out and how delicious and fresh the taste is (my family loves it), I am sure I will cook this again in the future.
