This is one from my mum’s recipe collection. She used to make it loads when I was growing up and it brings back a lot of familiar memories of family mealtimes which were something I really valued and are the reason I love cooking so much. #tastesarememories

This is one from my mum’s recipe collection. She used to make it loads when I was growing up and it brings back a lot of familiar memories of family mealtimes which were something I really valued and are the reason I love cooking so much. #tastesarememories

Preheat the oven to 180degrees c and boil a kettle full of water.

Add the finely chopped onion and crushed garlic to a pan with a splash of oil and cook over a medium heat until soft.

While it’s cooking, wilt the spinach by covering with boiling water. Then squeeze out as much of the liquid as possible (you need to squeeze really hard)

Finely chop the spinach and add to the bowl with the fried onion and garlic. Leave to cool. Once cooled, add the cottage cheese, eggs and yolk, cream nutmeg, one handful of Parmesan and some seasoning. Mix everything together really well.

Now it’s time to blind bake your pastry. Roll it out and line a quiche dish / tin with pastry. Prick the base with a fork and add banking parchment and baking beads. Bake in the oven for 12 minutes until golden brown.

Remove the pastry from the oven. Remove the parchment and baking beads, then add the filling mix to the pastry case. Top with the remaining Parmesan and bake for 25-30 minutes until golden brown.
