These little beauties are the perfect breakfast for the festivities. Make them a little more fancy by adding chocolate chips or vanilla custard filling.

Weigh your flours, yeast and sugar in a bowl and combine. In another bowl mix milk, oil, yogurt and vanilla paste. Start by adding your dry ingredients a handful at the time to the wet ingredients, mixing in between. Continue until all the dry ingredients are fully incorporated. Add your salt towards the end.

Knead in the bowl until your palms are clean from any dough mix, cover and let rise. Mine took a long time, overnight in fact. Preheat your oven at gas mark 4/180 C You should have about 570g of dough. Divide this into 6 of 95g each and start shaping. You can also shape it as a round brioche which will be lovely filled with custard. Let rise a second time for about 20min. Wash with egg yolk and milk and sprinkle with nib sugar before baking for about 20min or just about golden.
