Paneer bhurji sandwich

Boil milk. As it comes to boil, squeeze lemon juice. Slowly stir with a laddle.

Chena and whey water separates. Strain and collect the chena (paneer). Wash under running water to remove traces of lemon. For paneer bhurji, the paneer must be moist and not very dry.

Now heat a kadhai with oil. Add onion and saute. Next add chopped tomato, grated ginger and coriander leaves.
Put salt, turmeric powder, red chili powder and chicken masala. Mix. - 4
As tomato becomes mushy, put the paneer. Mix, break paneer into clods and cook for some time. Do not over fry, it should be soft and moist. Paneer bhurji is ready!! Keep aside.

Next prepare the green chutney with the above mentioned ingredients.

Next heat a tawa.
Next on a plate take the bread slice, spread the green chutney. Put a generous amount of paneer bhurji. Now take another bread slice. Spread green chutney on it too. Place this bread in top.
Now roast the assembled sandwich. - 7
Roast with butter/ ghee/ oil as per your preference, till crispy and golden brown.

Ready!! PANEER BHURJI SANDWICH IS READY TO SERVE.
I SERVED IT WITH KHATTI MEETHI DATES TAMARIND CHUTNEY AND RAW ONION.
