Ingredients

45 minutes
2 servings
  • 2goose breasts, skin on, slighty peppered
  • 2small honey crisp apples, cored, 1/2 inch thick slices
  • 12small young potatoes, skin on
  • 12peeled pecan nuts
  • 1/2 cuprum for flambee
  • black gound fresh pepper, pinch of salt if desired
  • fresh parsley for garnish
  • Cost. Geese feed themselves here at the farm. My butcher charges $100 for an 8 pound dressed goose, $12 a pound,but we make 40 other meals from one goose, $2.50 per meal. That is why these are special

Steps

45 minutes
  1. 1

    Sear the breasts. Score the skin on top of the breasts across the grain with a sharp knife, so the fat can escape when melting.

    Sear in dry medium heat cast iron pan, five minutes each side, meat side first.

    Slide pan in preheated 400F degree oven with roasting tray of ten pecans, two sliced apples, 1/4 inch thick, and 12 small yellow skinned potatoes. Roast 30 minutes, turn oven off, leave vegetable in, take out skillet with goose breasts, add pecans to skillet.

    Flambee goose and pecans in skillet with half cup rum. Slice breast, thin as sandwich roast beef, across the diagonal. Serve with potatoes, apple and pecans. Enjoy.
