This is a very popular Mexican sweet for this time of year. This is my mom's recipe.

Cut the pumpkin and remove the seeds. Clean it thoroughly, then cut it into evenly sized pieces.

Make small cuts in the pieces so the syrup can soak in well.

In a large enough pot, arrange the pumpkin pieces skin side down. Break the brown sugar into small pieces and add it along with a cinnamon stick for each layer. For the last layer, place the pieces skin side up.

Add enough water to almost cover the last layer of pumpkin. Cover and cook over high heat. When it starts to boil, uncover, reduce to medium heat, and let it simmer until the water has evaporated and only the syrup remains.
