Cooking Instructions

Mix together the ingredients (except cabbage, sauerkraut and juice). Form into balls size needed to fit cabbage leaves.

To prepare cabbage: remove core. Place in hot water until leaves are slightly softened. With a sharp knife remove the excess thickness of the cabbage vein.

Place meat mixture on cabbage leaf, roll once, fold over one side of leaf, continue rolling, then tuck in opposite end of roll.

Add layer of sauerkraut to the bottom of a large roaster, add cabbage rolls. Continue layering kraut and cabbage rolls. Pour 1 quart tomato juice over all.

Place roaster on baking sheet (in case it bubbles over). Bake at 300 degrees Fahrenheit for at least 3 hours. The longer baked, the better the flavor. If more liquid is needed during baking add water not juice.

These freeze well.

I tried yo make this in my 6 qt pressure cooker, but realized I didn't have enough room, and moved it to a regular soup pot (8 qt), but I bet a 6 qt dutch oven would work too since you can fill it more than a pressure cooker.
