Take a bowl and add the cleaned mutton. Add all the spices, salt, and oil. Add the yogurt. Mix everything well by hand. Let it rest for 10 minutes.

Next, take a deep clay pot (handi) and heat it. Add 1 tablespoon oil.

Once the oil is hot, add asafoetida and bay leaves. Then add the marinated mutton and stir well. Drizzle a little more oil on top. Add all the whole spices.

Now reduce the heat. Cover the handi. Seal the edges all around with wet dough.

Cook on low heat for 35-40 minutes. Very little water is needed for this.

After 40 minutes, remove the lid. You will see the mutton is fully cooked and the oil has risen to the top. The aroma will be wonderful. Remove the handi from the heat. Let it rest covered for a while. Then serve, ideally with rice.
