Chicory is by far my favourit veg. It is also very Belgian, especially the ground version, most of the exported chirory is from hydroculture. Also nice but milder. I like the slighly bitter taste! I always try to eat them in a different way, this is what I came up with on my veggie day. Very easy and quick and healthy.

Quarter the chicory remove the stem. Microvawe for 7 or 8 min on 750 watt in a tablespoon of water with the vegeta

Bake the cheese on both sides in a non-stick pan. 3.5 min on eather side

Remove cheese from pan. In the same pan carmelise the walnuts with the syrup. Do not burn them.

Put the cooking water from the veg in the pan

Put the chicory in a deep platter put on the cheese. Put on the nuts and the sauce. Garnish with the raspsberries

TIP:
Make it vegan by changing the cheese with smoked tofu
