Veg Pulao
Pressure cooker recipe for veg pulao.
Steps

Rinse 2 cups of rice thoroughly in a bowl and soak for 1 hour.

Add 2 tablespoons of ghee to a pressure cooker and heat. Add 1 teaspoon cumin seeds, bay leaves, black cardamom, green cardamom, and cinnamon stick. Add the chopped onions and sauté until golden. Add the green peas and carrot, and sauté the vegetables. Add salt to taste, 2 tablespoons Kashmiri red chili powder, 2 tablespoons garam masala, and 1/2 cap kewra water.

Add the soaked rice and mix well. Pour in 2 1/2 cups water, close the pressure cooker lid, and turn off the heat just before the first whistle.

Once the pressure releases, open the lid. Your hot veg pulao is ready to serve. Enjoy with yogurt, raita, or chutney.
