Soak the sun-dried tomatoes in hot water to rehydrate them and remove excess salt and any impurities. Leave them in the water for at least 15 minutes, then rinse and squeeze them dry.

Place them in a container suitable for an immersion blender, add the milk and olive oil, and start blending. Gradually add water as needed to achieve a creamy consistency.

Transfer the mixture to a bowl, add the soaked and squeezed bread slices, coriander, ginger, pepper, and oregano, and mix everything well.

In a separate flat plate, drizzle the cornmeal coating with olive oil and mix well to coat it.

Form balls about the size between a hazelnut and a walnut, roll them in the cornmeal coating, place them in the air fryer basket, and cook at 400°F for about 6 minutes. You can achieve a similar result in a convection oven at the same temperature for about 10 minutes.
