Add 1/3 cup of cream to the melted chocolate, and set aside.

Whip the remaining cold heavy cream.

Gradually fold the cooled white chocolate into the whipped cream, mixing gently from bottom to top with a spatula.

Pour the mixture into ramekins and refrigerate for at least 3 hours.
