Bill's Ricotta Cheese Pancakes!

I got Bill Granger's recipe and made my own version that is easy to make at home.
It's even fluffier and more mouth-watering than the real deal!
This is the result of much trial and error.
This is the most delicious and easiest version.
It's maintains a nice cheesy texture.
The pancakes themselves aren't that sweet, but if you use the honeycomb butter and powdered sugar, they will become sweet enough.

Steps

For the honeycomb butter, bring the butter and honey to room temperature and mix together.

Put the ricotta cheese, milk, and egg yolks into a bowl and gently mix together.

Sift the flour, baking powder, and salt into the mixture from Step 2 and mix until just combined.

In a separate bowl, mix the egg whites until peaks form.
- 5
Fold in the egg whites in two goes into the mixture from Step 3.

Melt the butter in a heated frying pan and spoon the batter into it. Cook over a medium-low for about 2 minutes. When fragrant and cooked, flip over and cook the other side as well.
