Quick Jalapeño Poppers

Quick, easy and not fried.
And bacon, enough said!

Ingredients

45 min
20 poppers halves
  1. 1 teaspoonolive oil
  2. 10red jalapenos
  3. 100 gbacon (diced)
  4. 230 gplain cream cheese
  5. 100 gwhite cheddar (finely grated)
  6. 1 teaspoonblack pepper
  7. 2eggs
  8. 1 cupbread crumbs

    Preheat the oven to 180'C.

    Coat a oven dish with olive oil and set aside.

    I used red jalapeños, but the green once work perfectly as well.

  4. 4

    Slice the jalapenos in half, keeping the stem intact. Scrape out the seeds. Keep some seeds for extra heat.

    Fry the bacon in a pan until cooked. Diced into smaller pieces.

    In a bowl combine the cream cheese, cheddar, bacon and black pepper. Whisk until the cream cheese is smooth.

    Scoop the cream cheese mixture into the jalapenos halves.

    In a small bowl whisk the eggs.

    In a separate small bowl add the bread crumbs.

    Dip the filled jalapeno first into the egg mixture to cover completely with eggs and then into the bread crumbs to cover completely with bread crumbs. Place in the oven dish with the open side facing up.

    Bake for 30 minutes until golden brown.

    Served with avocado guacamole.

    Store in a container in the fridge, still tastes amazing cold the next day.
